The production of kvass takes place in several stages: wort preparation, fermentation, blending, filtration and bottling. The main raw material for the production of kvass is malt. Kvas wort is made from it or from special concentrates. In fermented fermentation yeast is added, which are removed after cooling the kvass (the process of blending and filtration). Then kvass is pasteurized so that no unwanted microbes remain in it. This is the standard procedure for making kvass.

 

Kvass filtration is used in industrial brewing and is used to extend the shelf life of the product. Kvass is filtered from residues of yeast and bacterial cells, suspended particles, various mutating impurities. In this case, the use of kieselguhr filters, filter presses, separators, as well as cartridges (cartridges) are used.

 

Unfiltered (unlighted) kvass is stored for only a few days, clarified - up to 7 days, bottled filtered kvass from yeast has a long shelf life - up to 60 days.

TRAP-filtration of kvass, clarification.

 

Trap-filtration after the kieselguhr filter is a system that does not use a filter press, in which filtration is carried out in a closed housing with minimal loss of carbon dioxide and prevents contact of the product with air, preserving the taste of the drink. At the same time, product losses and labor intensity of the process are significantly reduced. This method is widely used in Russia (including large beer corporations). It allows you to significantly reduce the cost of consumables (in comparison with the filter card) and the costs associated with product losses. The system as a rule consists of a filter holder (see below) with a set of cartridge filter elements.
